Ingredients
- About 24-30 ounces of corn (I used can, but you can fresh or frozen as well)
- 2 cups heavy cream
- 1 Tablespoon brown sugar
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 Tablespoon corn meal
Instructions
- Combine the corn with heavy cream in your Instant Pot.
- Add brown sugar, salt, and pepper and mix.
- Place the lid on top and cook on manual high pressure for five minutes.
- When the time goes over, quick pressure release the extra pressure.
- Turn the Instant Pot to saute and whisk in cornmeal until desired consistency.

Substitutions
Here are a few substitutions to consider:
- Instead of heavy cream you can sub it for a combo of milk and butter- combined and creamed together.
- Other combinations could include:
- Plain greek yogurt and milk
- Evaporated milk
- Half and half with butter
- If you try any of those options let me know how it turns out. I think heavy cream is the best option and cannot vouch for using anything else.
- I like how the brown sugar helps keep the corn sweet but if you are wanting to watch your sugars, you could omit it or use less
Can you double this recipe?
Yes you can! This recipe is very easy to double.
How many corn stalks is 30 oz?
One medium ear of corn is about 1/2 cup of kernels. Four medium ears of corn will yield about 2 cups, the equivalent of a 10-ounce package of frozen corn. So you will want about 12 medium-sized ears of corn.
Is canned creamed corn the same as homemade creamed corn?
While the idea is the same, fresh creamed corn is always better than canned with less preservatives.

Yes. In a medium saucepan slowly warm your corn on medium-high until warmed through.
