Easy Instant Pot Baked Potatoes

This foolproof recipe is so easy to follow and yields delicious, perfectly cooked potatoes every time. Plus, they’re a great way to use up leftovers.

Give these Instant Pot baked potatoes a try today!

Ingredients

Russett Potatoes (I usually do 4-5 but you can do more if you want)

Olive Oil or Avocado Oil

Salt (I did about 1 teaspoon)

Pepper (I did about 1 teaspoon)

Garlic powder (I did about 1 teaspoon)

1 cup broth (I used vegetable Better than Bouillon – if you go that route, I just put a cup of water in with a teaspoon of BtB)

Instructions

  1. Wash potatoes and place them in a bowl.
  2. Drizzle oil and toss to coat potatoes.
  3. Add salt, pepper, and garlic powder and toss.
  4. Poke each potato with a fork three times in the center.
  5. Place 1 cup of broth at the bottom of your Instant Pot
  6. Place your trivet in the pot and put potatoes on top of the trivet.
  7. Place lid on the Instant Pot and set it for 12-14 minutes (depending on how soft you want them).
  8. Once the timer reaches zero, let it naturally release its pressure for five minutes and then let out the rest of the pressure.

Feel free to vary how much seasoning you put on your potatoes. I like the flavor and crispiness it creates!

If you don’t like a certain seasoning switch it up for anything you think might taste good.

If you don’t have vegetable broth you could use chicken or beef broth.

How do you eat a baked potato?

The most common way to eat a baked potato is to slit the top lengthwise with a knife, push on each end of the potato to open it wide, and mash it with a fork.

Is a baked potato good for you?

Yes, a plain baked potato can be healthy for you, especially if you eat their skin which is full of fiber. Its when you add lots of toppings on them that the added fat and calories come in.

How do you reheat a baked potato?

Preheat the oven to 350° F and place the potato directly on the rack. Bake for 15-20 minutes, or until the potato is heated through.

Yes, you can make them ahead of time, they are best served within six hours.

EASY Slow Cooker to Instant Pot Conversion

If you’ve just gotten an Instant Pot and are wondering if you can use your slow cooker recipes in it, the answer is yes! Here’s a guide to converting your favorite slow cooker recipes for the Instant Pot.

EASY Slow Cooker to Instant Pot Conversion

If you’re reading this chances are you love your slow cooker. It’s the best way to make a delicious meal with very little effort. However, you may not have all day to wait for your food to cook. That’s where the Instant Pot comes in! With this one simple method, you can convert your slow cooker time to instant pot time.

I used to be a die-hard slow cooker fan. I would put everything in there in the morning and come home to a cooked meal at night. However, over time I started to get frustrated with the lack of flexibility that my slow cooker allowed.

If I was running late or wanted something cooked sooner, I was out of luck. That’s when I decided to convert all my slow cooker recipes to instant pot recipes!

In this blog post, I will share with you the method that I use for converting my recipes – as well as some tips on what ingredients you can’t cook in the instant pot and how much liquid you should use.

Slower Cooker to Instant Pot Conversion

If you have a recipe that you love to make in your slower cooker rest assured you can also prepare it by way of an Instant Pot.

Both machines are great and serve a purpose but the Instants Pot definitely has the slower cooker beat when it comes to the time it takes to cook.

Which is why you will need to convert your recipe slightly to accommodate the Instant Pot.

It’s quite simple if you follow this simple method:

Multiplying your slow cooker high time by 6 and convert that number into minutes.

For example: if the high is four hours, you’d multiply that by 6, making it 24 minutes in the instant pot.

How much liquid should you use in your Instant Pot

When cooking in a slow cooker you don’t need to have liquid in it. However, it is not the same with your Instant Pot. You do need to have at least one cup of liquid in your pot for your recipe.

Because the Pot heats up so quickly there is not enough time for your ingredients to release their natural juices which can cause your food to burn.

You will need to adjust your slow cooker recipe so there’s at least one cup of liquid. Because liquid doesn’t evaporate in your Instant Pot, it will still be in your recipe when it’s finished cooking.

To avoid your favorite dish from becoming too liquidy or watered down you can set your ingredients up on the steamer insert to keep them above the water line.

You can also use the sauté function to boil off the excess liquid.

What ingredients don’t do well in the Instant Pot?

There are some ingredients that don’t do well under pressure in the IP.

That means if it is an ingredient you would use for your slow cooker recipe you may need to omit it and find an alternative.

Some dairy products get too hot and could scorch easily. For example ingredients like sour cream, milk and soups may need to be replaced for something different or change the recipe to add these ingredients after the pressure cooking setting has been completed.

Thickening ingredients like flour or corn starch can also have to keep your IP from building pressure properly. You can always add thickening ingredients at the end by simmering with the sauté function.

Because liquids don’t evaporate you also want to avoid using liquids like wine and beer.

The Best Instant Pot Zuppa Toscana – Olive Garden Copy Cat

When I first went to college, a friend posted on Facebook about THE BEST SOUP EVER. 

I asked her to send it to me, and I was so excited when it arrived in my email. 

It was a recipe for Olive Garden’s Zuppa Toscana – and at that point, I’d never had it (up until that time in my life, Olive Garden wasn’t a place we frequented as much as we do now). It only took a few bites for me to realize it was one of the best soups around.

So, obviously, I had to make a homemade version for the Instant Pot – and it is D-E-L-I-C-I-O-U-S. Not only that – it’s super easy!

Ingredients

  • 2.5 pounds of russet potatoes, sliced
  • 6 cups water
  • Better than Boullion (you could also just do 6 cups of chicken broth – whatever is easiest)  
  • ½ cup chopped Onion
  • 1 Tablespoon Garlic
  • ¼ cup Bacon bits
  • 1 lb Italian Sausage
  • 1 tablespoon Oregano
  • 1 cup Heavy cream
  • A couple of bunches of Kale, chopped
  • Grated Parmesan cheese
  • Salt  (to taste)
  • Pepper (to taste)

Directions:

  1. Turn the instant pot to saute. Cook and crumble sausage.
  2. Add onion and garlic and cook until translucent.
  3. Add in broth, bacon bits, and oregano and stir. 
  4. Add in potatoes. 
  5. Put the lid on.
  6. Put on soup setting for 5 minutes.
  7. Naturally, release pressure for 5 minutes. Then release all the pressure immediately using quick pressure release. 
  8. Add heavy cream, stir.
  9. Add in seasonings to taste. Also, add in about 1/2 cup parmesan cheese
  10. Stir in kale and let it wilt for a few minutes. 
  11. Serve! Delicious when parmesan cheese is served on top. 

What can I substitute the heavy cream with? 

You could use half and half. My mom has also just used regular 2% milk as well with success. Heavy cream just tends to yield the creamiest results 🙂 

Do I have to use kale?

 I know some people will use spinach instead, so that is an option. I wouldn’t omit kale or spinach altogether, though. 

How can I make this healthier?

  • You could use half and half or 2% milk instead of cream.
  • Turkey or chicken sausage instead of pork sausage

Can I freeze this? 

Yep! Just make sure to let it cool completely and freeze in a freezer bag, making sure to lay it flat. We also really love Souper Cubes, which are designed for freezing soup!

How can I make this in the slow cooker?

 I would put all the ingredients except for the heavy cream and kale in the slow cooker for 2-3 hours on high, or 4-5 on low. Stir in the heavy cream and kale shortly before serving.

When Can I Open My Instant Pot Lid?

An Instant Pot is an amazing kitchen appliance that is sure to make your life so much easier! However, there ARE some questions that may come up along the way. A common question asked is when can I open my Instant Pot lid? Keep reading to learn the answer!

When Can I Open My Instant Pot Lid?

You may have a lot of a questions when it comes to your Instant Pot.

Once you get the hang of it, you will find out how easy it is to use and before you know it you will be a pro- knowing everything there is to know.

But you have to start somewhere when it comes to answering your questions.

When can I open my Instant Pot lid?

First things first. Never open your lid while the pot is pressurized.

You will need to wait until the float valve on the lid drops down so you know that all the pressure has been released.

Once you close the lid and the Manual / Pressure mode has been activated make sure the pressure value is set to sealing to ensure the pressure cooking feature will work.

Once the valve is down and clicks it is safe to open.

If you are doing a natural release, wait for approximately 10-15 minutes and then move the steam release valve to the “venting” position to make sure the steam and pressure have been released.

Make sure the float valve has dropped down and then it is safe to open the Instant Pot lid.

How To Clean An Instant Pot Lid

Not only is it a pressure cooker, but it also functions as a slow cooker, rice cooker, and more.

But with all of those functions comes added responsibility- the need to clean your Instant Pot lid! I

Why should I clean my Instant Pot lid?

Cleaning your Instant Pot lid is a crucial part of maintaining your appliance.

Not only does it keep it clean and functioning properly, but it also prevents the build-up of bacteria that can cause illnesses.

Your Instant Pot lid is one of the most important parts of the appliance. It is responsible for sealing in the pressure and keeping your food safe to eat. If your lid is not clean, then it could potentially contaminate your food. In addition, a dirty lid can also lead to decreased efficiency and performance from your Instant Pot.

How to clean your Instant Pot lid

Wipe it down

You should wipe down your Instant Pot and its lid after every use to avoid grime and food from building up on it. You can simply take a clean towel or microfiber towel and wipe it down with warm water.

Use the dishwasher

Consider putting your lid in the dishwasher after every 2-3 uses. You can put it in the dishwasher after every use- but if you are wiping it down regularly it may not need it.

The Instant Pot lid is dishwasher safe which makes cleaning it super convenient! Make sure your lid has cooled down from cooking before putting it in your dishwasher. You can place it on the top rack with the lid facing down.

Washing it in the dishwasher will help prevent unwanted odors and residue build up.

Wash by hand

You can always choose to wash your lid by hand. You may choose to do this after every use or every couple times. If you wipe it down after you use it you won’t need to give it a deep clean as often.

Start by removing the lid from the pot and setting it aside.

Then, wash the sealing ring in warm, soapy water. Be sure to rinse it thoroughly before putting it back on the lid.

Next, wipe down the exterior of the lid with a damp cloth. Let the parts air dry before placing back on your Instant Pot.

How to deep clean your Instant Pot lid

Every once in a while it is a good idea to deep clean your lid. You can do this by removing all the smaller parts such as the anti-block shield and the steam release valve.

Then slide out the condensation collector and pour out any remaining liquid.

Remove the inner ring and soak these smaller parts in a bowl of one part water and one part white vinegar. After they have soaked in the vinegar rinse them with cold water and let them air dry.

Use a sponge or microfiber towel and scrub the lid with warm water and soap. Rinse your lid with cold water and let it air dry.

After the pieces are dry you can re-assemble your lid and it will be fresh and ready for the next time you use it!

I love my Instant Pot. That being said, there are a few things that are confusing one of them being why some models have different settings than others.

One thing to keep in mind and be aware of is that not all models have a poultry setting. Is this a big deal? What IS the poultry button? Let’s discuss it!

What does the poultry button on my Instant Pot do?

The poultry button makes it possible to cook poultry with a low-pressure setting and a longer cooking time by presetting the cooking pressure, heat intensity time, and temperature.

The poultry setting sets a base cooking time and you can adjust it as needed. By default, the button cooks at high pressure for different lengths of time.

Can I still cook poultry in my Instant Pot if it doesn’t have the poultry setting?

Good news! Yes, you can!

Most recipes use manual (or pressure cook) in the cooking instructions. Always check your recipe for special instructions.

Why doesn’t my Instant Pot have a poultry setting?

If your Instant Pot does not have a poultry setting it is because it is an older model as newer models do not have this setting.

Newer models have replaced poultry settings with other settings that make it easier for you to cook poultry without having to convert your recipe into a pressure-cooking one.

Which Instant Pots have a poultry setting?

Both the Duo Model and the Duo Nova Series in the six and eight-quart models have a poultry setting.

The newer versions have replaced the poultry setting with ​”beans/chili”, “multigrain”, and “steam” which are perfect for cooking meats at a lower temperature while retaining moisture.

Instant Pots are perfect for recipes that take a long time because it takes just a fraction of the time compared to traditional means. Instant Pots are also helpful for cleaning! You only need to use one pot for all of your cooking needs, so only one pot gets dirty! It’s such a time saver, so you can do other important things around the house.

Can I leave the apple skins on?

You can keep the skins of the apple on if you’d like. The Instant Pot can soften the skins so the immersion blender can blend that up as well. It’s up to you.

I'm always on the lookout for new and interesting ways to use my Instant Pot, and this recipe for apple butter is a real winner! It's so easy to make and the end result is delicious. Apple butter is perfect on toast or biscuits, or you can even use it in recipes like apple pie. Give it a try - you won't be disappointed!

Ingredients

  • 5 lbs apples, peeled, cored and sliced
  • 1/2 cup water
  • 1/2 cup apple cider vinegar
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 tablespoon vanilla

Instructions

  1. Add all ingredients to Instant Pot.
  2. Cook on manual high pressure for 12 minutes.
  3. Let pressure naturally release for 5 minutes, then quick pressure release the rest.
  4. Once pressure has released, mash together the mixture until most of the chunks are gone.
  5. Put on low saute for about thirty minutes, stirring every few minutes.
  6. After 30 minutes, use an immersion blender to blender until smooth. If you don’t have an immersion blender, go to the next step.
  7. Let it reduce on low saute for another 45 minutes to an hour until it thickens and looks less like apple sauce.
  8. Use the immersion blender one last time to get rid of any lingering chunks.
  9. If you didn’t do the immersion blender step, wait for the sauce to cool and blend until smooth.

What Does the Burn Setting On My Instant Pot Mean?

Instant pots are amazing devices that can help you cook dinner quickly and easily. However, sometimes they can be a little bit confusing. One of the most common problems is when the “burn” setting comes on. In this article, we will explain what this means and how to fix it!

What Does the Burn Setting On My Instant Pot Mean?

Instant pots are all the rage right now, and for good reason!

They are amazing awesome gadgets that can help you cook meals quickly and easily.

But sometimes, you may encounter a problem with your instant pot where the “burn” setting comes on. This can be puzzling and frustrating, but don’t worry – we’re here to help!

What does the “burn” setting on my Instant Pot mean?

The BURN message on your Instant Pot means that the inner pot has gotten too hot. There may be a little bit of food at the bottom of the pot that is burning and your pot will stop heating to prevent your food from continuing to burn.

The BURN setting is a great tool to keep your food from burning or your pot from getting too hot. It alerts you if there is a problem which is great and should give you peace of mind!

Why does my Instant Pot display the “BURN” setting?

You may be getting the BURN message for any number of reasons. If so, go through this check list to see what might be the culprit.

  1. Your steam valve isn’t sealed– Because your pressure cooker cannot cook without steam  your pressure cooking process is at risk if there isn’t enough pressure. Be sure to check the pressure valve to the proper setting before you start cooking.
  2. There isn’t enough liquid– You need at least one cup of liquid when cooking in your Instant Pot for it to reach the required pressure. If there isn’t enough liquid your BURN setting may go off.
  3. The pot is not properly sealed– To fix this, simply make sure that the lid is on correctly and that there is no food or liquid blocking the seal. Once you have done this, the burn setting should turn off on its own.
  4. You put starchy foods on the bottom– if adding starchy foods be sure to add them to the top of your pot to keep them from burning the bottom
  5. Your heating element and base are not clean– before cooking always check to make sure they are completely clean and devoid of leftover foods that might cause quick burning.

What do I do if the BURN setting comes on my Instant Pot?

  • Push the cancel button on your pot to power it down
  • Check the steam valve to make sure it is on the venting position to release the steam
  • Check the ring to make sure it is cleaned and undamaged and properly installed.
  • Check the float valve to make sure it is clean
  • Check for burnt food
  • Put more liquid in your pot if there is not at least one cup of liquid
  • Check everything on your pot and start again

This can be unpleasant however, there are things you can do to clean it and help prevent it from smelling.

It might take a little extra work and time but it is definitely worth it to take those extra steps to take care of your Instant Pot!

Why does my Instant Pot Smell?

Your Instant Pot may start to smell for different reasons.

First of all, they are closed environments and don’t have great ventilation. So, if something smells off in your Instant Pot, it’s probably because food is stuck to the bottom of the pot or the sealing ring needs to be clean or in extreme cases- replaced.

How to get the smell out of an Instant Pot

If you notice that your Instant Pot has a strange smell, the first thing you should do is remove the inner pot and wash it with soap and water.

If the smell persists you can do the following:

  • Add one cup of vinegar and one cup of water to the pot
  • Roughly chop the peel of one lemon and add it to the liquids
  • Turn on the “steam” setting for two minutes
  • Let the steam release naturally
  • Remove the ring from the lid and let it air dry

How to clean the sealing ring

The sealing ring can be removed and placed in the dishwasher or use warm soap and water to clean it regularly. This should help with the smell.

You can also soak the ring in vinegar over night. Hand wash it or run it through the dishwasher the next day and it should be good as new!

If your pot still continues to smell you may need to replace your sealing ring.

Between getting the kids ready for school and rushing to work yourself, who has time to cook a leisurely breakfast?

Instant Pot Breakfast Casserole Sausage and Cheese is a hearty dish that will stick to your ribs and keep you going all morning long. This easy casserole can be made in minutes in your pressure cooker, so there’s no excuse not to have a delicious breakfast this week!

Ingredients

  • 6 large eggs
  • 1 lb ground pork sausage, cooked and crumbled
  • 1/2 cups cow’s milk
  • 1/2 tablespoon red pepper flakes
  • 1/2 cup onion, chopped
  • 1/2 cup bell peppers, chopped (red or green)
  • 1 cups Monterrey jack shredded cheese, shredded
  • 1 cup frozen hash browns
  • 1 teaspoon garlic powder

How can I make this lower in fat?

If you’d like to make this a little lower in fat, here are some recommendations:

  • Use turkey sausage or chicken sausage instead of pork sausage
  • Use a low-fat milk
  • Use a low-fat cheese
  • Use egg whites for some or all of the eggs

Can I use egg whites instead of whole eggs?

This would be an adaptation that you could certainly do. When substituting whole eggs with egg whites, it is usually done at a ratio of 2 egg whites to equal one whole egg.

So if you wanted to substitute all of the whole eggs in this recipe, you would need to use 12 egg whites (if you are using egg whites from a container, this would be 36 Tablespoons of egg whites). You could also do a half and half substitution if you’d like as well.

What are some adaptations I can make for this recipe?

There are lot of fun ways you can switch up this recipe:

  • Add different vegetables (green onions or diced jalapeno would be a good choice)
  • Use bacon or ham instead of (or in addition to) ham
  • Use a different kind of cheese, such as cheddar cheese
  • Swap out half the eggs for egg whites

What type of breakfast sausage do you use?

We just use whatever happens to be on sale at the supermarket. Jimmy Dean is probably our favorite brand.

Can I use tater tots instead of hashbrowns?

I think this would work just fine! I would make sure they were fully defrosted, though, and break them into pieces. I think it would make for a very tasty casserole!

Instructions

  1. Brown and crumble sausage – drain excess grease
  2. In a mixing bowl, whisk together eggs, milk, and spices until combined and frothy. 
  3. Add the remaining ingredients to the egg mixture and combine.
  4. Spray your springform pan with cooking spray
  5. Place mixture into the spring form pan
  6. Pour 1 cup ofthe water into the inner pot
  7. Place your trivet in the bottom of the Instant Pot
  8. Place the springform pan on top of the trivet.
  9. Put lid on the pot, make sure vent valve is closed, and set for 8 minutes on manual high pressure.
  10. After the timer goes off, quick release all the pressure right away.

Do you have to use a springform pan?

We do recommend making it in a springform pan and using the pot-in-pot method (pip method). You could probably also use an Instant Pot safe cake pan.

What type of springform pan do you use?

I used a 7″ springform pan from Fat Daddios for this. However, if you don’t have one (or you want to double the recipe).

How come there is liquid on top of the breakfast casserole?

This happens due to the condensation from the liquid in the Instant Pot that is required for this recipe. You can just pour it off – however, if it bothers you, you can cover the dish with aluminum foil before you cook it, and then the liquid will just collect on top of that instead.

What should I serve this with?

This breakfast casserole is delicious when served with salsa or cream gravy. It is also great when paired next to toast, biscuits, or seasoned grits.

Is this dish low carb?

Because of the hashbrowns, this isn’t as low carb as some dishes. However, you can take leave that out, and it will still be a delicious breakfast casserole that is a little more low carb. If you omit the potatoes, I might add in more red bell pepper.

How can I store the leftovers?

The leftovers can be stored in an airtight container in the fridge for up to 5 days. When reheating, you may need to add a splash of milk to help moisten it up again.

Can I freeze this?

Yes, you can freeze this Instant Pot Breakfast Casserole. Just wrap it tightly in foil or plastic wrap and place it in a freezer safe bag. It will keep in the freezer for up to 3 months. When you’re ready to eat it, thaw it overnight in the fridge and then reheat it in the microwave or oven until warmed through.

I don’t have an Instant Pot. Can I make this in the oven?

This recipe is based on our popular traditional sausage breakfast casserole. We would recommend checking out that recipe for an oven-friendly recipe.

Can I make this the night before?

Absolutely! In fact – we think that’s a better way to do! Just mix up all the ingredients, put them in the springform pan, cover and refrigerate over night. All you’ll have to do is cook it in the morning!

Can I make this dish dairy free?

If you’d like to make this dairy-free, we recommend using unflavored non-dairy milk (such as almond milk) and using your favorite non-dairy cheese.

Risotto has never been easier! This Instant Pot Risotto recipe can be made in under 30 minutes and comes with so much versatility in customizing it for your preferences.

Have you ever made risotto? It’s a classic Italian dish that can be a little time consuming to make. But what if I told you there was an easier way?

With the help of your Instant Pot, you can have risotto in just 30 minutes!

Follow this simple recipe and you’ll be amazed at how easy it is. So gather your ingredients and let’s get cooking!

Ingredients

  • 4 cups warm stock, chicken or vegetable, divided
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced

Instruction

  1. Start by turning the Instant Pot setting to saute.
  2. Once it registers as hot, add two tablespoons olive oil and the onions.
  3. Cook until translucent. If you plan to add a veggie that needs to be cooked, like mushrooms, add them now to cook.
  4. Then add garlic and cook for 30 seconds. Add the butter (or you can use just butter or just oil in this recipe) and melt it.
  5. Pour in two cups of Arborio rice and stir to coat the kernels in butter.
  6. Stir and coat for two to three minutes. A
  7. dd two cups warm chicken stock. Stir the broth as it simmers for two to three minutes.
  8. This allows the rice to absorb the liquid without scorching on the bottom of the pot.
  9. Once the food is simmering in the pot, add the remaining warm broth, set the Instant Pot to high pressure and cook for five minutes.
  10. Don’t forget to set the valve.
  11. After it has done cooking, allow it to release naturally for at least ten minutes.
  12. This cooks the rice without it getting sticky.
  13. Add any other veggies you want, like peas, the cheese, lemon juice, salt and pepper.
  14. Stir to combine. Garnish with a little extra cheese and serve hot. This makes eight servings.

Why this recipe works

A classic risotto starts with butter or oil, chicken stock, and some good herbs and spices. From there, you can add fresh veggies such as asparagus, peas, spinach, or butternut squash.

Finish with a creamy, meltable cheese like Parmesan, chevre, or Gorgonzola, and you have a dish you’ll never forget.

What kind of rice should you use for Risotto?

Risotto is made from Arborio rice, a short-grain rice that absorbs much more liquid than an average rice grain. This gives it the creamy, full texture and flavor that make it so popular.

Because it’s cooked in the Instant Pot, this recipe only calls for a 2:4 ratio of rice to water, which is lower than the stovetop version. But in order to get it to have that distinctive texture, you have to treat it differently than normal rice.

First, do not rinse the rice before cooking. Doing so will rinse off the starches that are important in the cooking process. Second, you need to coat the rice in the oil or butter for a few minutes to seal the grain and prevent it from becoming sticky like most rice dishes. Third, you should add half the warm stock while sauteing the rice and let the rice absorb some of it for a few minutes before adding the rest of the warm liquid and cooking it on high pressure.

Arborio rice looks much different than classic white rice. It’s unique in shape as well as texture and flavor, which makes it such a fun and flexible side dish.

How long do I cook Risotto in the Instant Pot for?

You start the cooking process on saute, cooking the onions and garlic, then coating the rice in oil or butter. After adding the broth in two parts, you just need to cook it on HIGH pressure for five minutes, then give it a ten minute natural release. High pressure is important to help the rice fully absorb the liquid, and the natural release keeps the rice from getting sticky.

What can I add to Risotto?

The best part about risotto is it can be a blank canvas for your creativity. Adding lemon, peas and Parmesan is perfect for a chicken or fish dish. Gorgonzola and asparagus risotto holds up very well with something heavier like a pork chop or steak. You can really go crazy and add cinnamon or nutmeg even!

Starting with the liquid, you have a few options. Salted water works, but chicken stock or vegetable stock are the standard liquid used. Sometimes, people substitute about 1/4 of the liquid with white wine, added at the beginning of the process. Just don’t forget to warm the wine first, like you do with the other liquids.

How Can I add Vegetables to Risotta?

You can add just about any veggie to risotto. The cooking time of the vegetable will dictate whether you add them before or after cooking the risotto. Something like onion, butternut squash, mushrooms or asparagus need more time to cook, so they should be added in the saute step. Peas, spinach, or cooked corn can be added at the end of cooking and brought to temperature in the Instant Pot.

Can I add cheese to risotto?

Any cheese that melts and dissolves is a great candidate for finishing off a risotto. Parmesan (fresh, not out of the can) is the classic, but chevre, Swiss, Gorgonzola or blue cheese will make it out of this world.

How long can I keep this in the refrigerator?

When stored in an air tight container, this risotto should last a couple of days. It may not reheat as perfectly as when it was freshly cooked.

Ingredients

  • 1 pound ground Italian sausage

  • 1 or 2% milk or evaporated milk

What type of pasta sauce do you use?

I honestly just use whatever is on sale at the grocery store!

Where can I find oven-ready lasagna noodles?

These are readily available at just about any grocery store in the pasta aisle. You probably can use regular lasagna noodles since it should boil in the Instant Pot.

Can I make this soup vegan?

If you’d like to make this soup vegan, you will need to omit the sausage and use coconut milk or unflavored almond milk instead of the heavy cream. You will also need to use a vegetable broth instead of beef broth.

Can I use evaporated milk or regular milk instead of heavy cream?

Yes, you can. It may not be quite as rich, but it should still taste very delicious!

Instructions

  1. Press saute on your Instant Pot.
  2. Add olive oil to the pot of your Instant Pot and let it heat for a minute
  3. Cook and crumble the sausage with garlic. Drain excess grease and deglaze the pot with a splash of water, scraping up all the browned areas.

Why did I get a burn notice?

If you get a burn notice, it’s probably because you didn’t deglaze the pot after cooking the sausage. If you don’t get all the browned, stuck on pieces off of the bottom, this can cause the burn notice to appear on the Instant Pot. Do I have to cook the sausage in the Instant Pot?

Nope! We just find it to be easier and make for less clean-up, but if you’d rather cook the sausage on the stovetop, that is a-okay!

What should I serve this soup with?

We love serving this bread with some crusty garlic bread, dinner rolls, or garlic knots and a nice, delicious salad. Caesar salad is probably our favorite go-to!

Can I freeze this soup?

You can store the leftovers in an airtight container in the fridge for 3-4 days.

How should I reheat this soup?

This soup can be reheated on the stovetop or microwave – though you may need to add some extra liquid. If you are reheating from frozen, I recommend adding to the Instant Pot with 2-3 cups of broth and heating on manual high pressure for 15 minutes.

Instant Pot Lasagna Soup is the perfect way to enjoy all the flavors of lasagna with a fraction of the work!

Ingredients

  • 1 pound ground Italian sausage
  • 1 Tablespoon minced garlic
  • 1 Tablespoon Olive oil
  • 24-ounce jar pasta sauce (any variety)
  • 2 cups beef broth
  • 1 cup water
  • 1/2 Tablespoon onion powder
  • 1 Tablespoon Italian Seasoning
  • 1/2 cup grated parmesan cheese
  • 8-10 oven-ready lasagna noodles (uncooked)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup heavy cream

Instructions

  1. Press saute on your Instant Pot.
  2. Add olive oil to the pot of your Instant Pot and let it heat for a minute
  3. Cook and crumble the sausage with garlic. Drain excess grease and deglaze the pot with a splash of water, scraping up all the browned areas.
  4. Add in the pasta sauce, water, beef broth, seasonings, and parmesan cheese. Mix.
  5. Add in broken-up lasagna noodles and cover with liquid.
  6. Put on manual high heat for 6 minutes.
